Birria Tacos

These birria tacos are famous. They are possibly the most famous tacos you will find on social media.

But what are Birria Tacos? At its most basic, birria is a beef brisket stew bathed in a combination of chiles and spices, giving it a deep, red hue. Birria tacos feature corn tortillas filled with the stew’s tender, juicy brisket. The tortillas are dipped in the thin layer of (glorious) fat that floats to the top of the birria, then filled with meat and thrown on the griddle, giving them their Instagram-worthy look and addictively crispy exterior. Birria tacos are served with the consommé, or broth from the stew, on the side, topped with onions and coriander. The tacos are dipped in the consommé, making for a multiorgasmic gastronomic experience that people can’t seem to get enough of.
